So does that mean that 04 race headers fit on the 08 without issue too?

No reason why they won't - they probably won't flow as well though.
The 08-10 headers have varaible connectors that allow you to link 1-3 2-4 or 1-2 3-4 depending if you want peak power or peak torque.
People forget about things like that most of the time.
